I don’t normally bake much, not that I can’t, but that when I do I eat it all. Okay, not all but moderation is NOT something I was gifted with. And of course like everybody else I have Pinterest which is loaded with recipes and so today I decided to treat the fam with something.
Love. Love. LOVE LEMON, I get that from my mom….anything that you could possibly find in lemon she would have to buy and not just one….she bought stuff buy the dozens. Anyhew…. I happened to find a tasty looking recipe and today was gonna be the day to try it. Also it had Zucchini in it so really, it’s a healthy cupcake…right?!

Ingredients
- 2 eggs
- ¾ cup sugar
- ⅓ cup canola oil
- 2½ tablespoons lemon juice
- rind from one lemon (approx. 2 teaspoons)
- ⅓ cup milk
- 1 teaspoon almond extract
- 1½ teaspoons baking powder
- ½ teaspoon baking soda
- 1⅔ cup flour
- ½ teaspoon salt
- 1½ cups shredded zucchini
Preheat oven to 350 degrees.
Mix together dry ingredients in a small bowl.
Combine eggs, sugar, oil, lemon juice, milk, rind and extract in a large bowl. Stir in dry ingredients until well combined.
Stir in zucchini.
Line a cupcake pan with papers. Fill each well ⅔ full and bake for 15-17 minutes or until a toothpick comes out clean. I only had mini papers so my cooking time ended up being more around the 11 min mark. Cool on a wire rack.
Serve with cream cheese frosting or lemon buttercream.
Icing was super easy with only four ingredients but I had so much left over. Not that I told anybody….. it is now hidden in the back of the fridge so I can practice my moderating.
Icing
2 lemons
1 cup butter
3 cups powdered sugar
4 oz cream cheese
-Cream butter with mixer on medium
until light and fluffy. Zest lemons and add into
butter (you should have about 1 tablespoon lemon zest).
-Juice ½ of one of the lemons and
add 2-3 tablespoons to butter mixture.
-Add powdered sugar ½ cup at a time and
beat until light and fluffy. Add softened cream
cheese and beat until fluffy.
-Add more lemon juice if required to reached desired consistency.
