Lazy Afternoon Lemon Zucchini Cupcakes

I don’t normally bake much, not that I can’t, but that when I do I eat it all.  Okay, not all but moderation is NOT something I was gifted with.  And of course like everybody else I have Pinterest which is loaded with recipes and so today I decided to treat the fam with something.

Love.  Love.  LOVE LEMON, I get that from my mom….anything that you could possibly find in lemon she would have to buy and not just one….she bought stuff buy the dozens.  Anyhew…. I happened to find a tasty looking recipe and today was gonna be the day to try it.  Also it had Zucchini in it so really, it’s a healthy cupcake…right?!

Homemade Cocoa Mix

Even though the winter weather here in the beautiful Okanagan is almost coming to an end, it’s always nice to have some hot cocoa on hand.

We whipped up a batch of home made goodness that is so dee~lish I’m thinking we will never ever buy store bought again.

Here is what you will need to make this amazeballs cocoa~

3 1/2 cups sugar
2 1/4 cups cocoa
1 TBSP table salt

Mix everything together.  Use a cup of milk warmed up with 2 TBSP of the cocoa mix.  Be sure to add some mini marshmellows ~cause helloooooo every cup of cocoa needs some mellows!

Store the rest in an airtight jar.

 

 

Aging….such a dirty word

I’ve never been one afraid of aging.  Not one to have an issue with the number of birthday candles, nor afraid of growing old….that is until now.  Even though I still feel 18 and well to be honest probably still act like it, lately the game has been changing.  Since I hit my forties I’ve been noticing the grey hairs.  Bah! No big deal, just rip those suckers out ~gone, see ya!  Those do not bother me….the thing that is getting me down is the wrinkles, yup, pesky lines on the face.

You see I developed an allergy a few years ago, to what we still don’t know, but if I eat this mystery allergen, my face blows up like a balloon.  When I say blows up, I mean like HUGE!!! My face stretches so bad for hours.  I can take an antihistamine but it literally lasts most of the day.  So if you think about how many times this has happened (which is LOTS) and combined with the amount of stretching my face has had to do (TONS), surely it can’t be good.

So I’ve decided to take action.  I’ve looked at all the science behind the aging process and why things are happening to me.  The fact that the skin loses its elasticity (the ability to stretch and return to normal~ok big issue with the allergy thing!) which results in sagging.  So if you combine the elasticity thing with gravity….hello bagging and sagging 😒.  Your cells turn over more slowly and your face isn’t as oily anymore so you end up with drier, thinner skin.  These are just a few things but I’m thinking they can surely be slowed to a crawl a little (well except for the gravity issue).Read More
